Getting Healthy!



Since August I have really been trying to lose weight and to get healthy. To date I have been able to lose 37 lbs :D I struggle with not making fastening foods and baking. I have been really watching the amount of fat and sugar I use when cooking for my family. Today I was in the mood to bake and decided to whip up a batch of scones. I tend to look up about 5 different recipes and then build my own from there. Here is my recipes for these amazing lemon blueberry drop scones!

Lemon Blueberry Scones

1 1/2 cups whole wheat flour
1/2 cup all purpose flour
1/4 cup sugar
2 tsp baking powder
1/4 tsp salt
2 tbsp wheat germ
6 tbsp margarine, chilled
1/2 cup milk
1/3 cup fresh lemon juice
1 tbsp lemon zest
1 cup frozen blueberries

1. Mix flours, sugar, baking powder, salt and wheat germ in a large bowl.
2. Cut margarine into cubes and toss in the flour mixture. Mix together with your hands to get the margarine into small pieces.
3. Add milk, lemon juice and zest. Mix well.
4. Using a spatula fold in the blueberries. Using a ice cream scoop, place on sprayed cookie sheets. Bake at 400* for about 14 minutes, or until the bottom is golden brown.
* If you wish you can add a lemon drizzle frosting over the top of the warm scones
Lemon Drizzle
1/2 cup powder sugar
1 1/2 tsp lemon juice
1/2 tsp lemon zest
